Unfortunately I the answers are: you can't and no.

You can load the last team for each format. In the team selection screen select Load Team and you select from the last of each format.

The answer to your first question of if you can check what the pitch is like is no sadly, at least not in advance. And there is no way of checking the speed of delivery as that isn't integrated into the game as of yet. Hopefully it is something that will be added in in future.

England do not play the 2 T20's vs West Indies in Sept
Enlad play 4 test matches when they go to india & also 1 more t20 then they should?
Also when i play pak are the games played in dubai

The matches are not totally the same as in real life. At the start of the game (in the first year) the schedule is mostly accurate, but after that it is put in by the devs. Presumably it's based on the FTP.
