Does anyone know if giving a player the captaincy makes any difference to their performance or the teams? The AI clearly thinks so as it will appoint a new Captain at the start of a new domestic season. It also made an England debutant (30 years old) Captain for a new international series.

Makes no difference at all. You will also notice that the AI will ONLY ever appoint a specialist batsmen as captain, unless the developers have preset a real life captain (such as Sarfraz Ahmed or Jason Holder).
For example, say the AI selected your starting XI and it had six allrounders, one wicketkeeper, three bowlers and one specialist batsmen. Even if the specialist batsmen is straight out of the youth team, he will be appointed as captain EVERY TIME! Major limitation! -
